Baked Coconut Shrimp


Lighted up by baking instead of frying, this healthier version won’t leave you disappointed.

Start with your standard breading procedure, using flour, eggs, and a panko/coconut mixture.

Send each shrimp through the dip bath and arrange on a foil lined sheet pan. Bake at 400 degrees for 15-20 minutes, flipping halfway through.

Serve on your favorite Re-Play plate with the dipping sauce of your choice. A mixture of orange marmalade, mustard, and horseradish to your liking is an easy one!

Ingredients:

  • 1/3 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 large eggs, beaten
  • 3/4 cup panko bread crumbs
  • 1 cup sweetened shredded coconut flakes
  • 1 pound raw large shrimp, tails attached

Preparation:

  1. Preheat oven to 400 degrees.
  2. In one container, season flour with salt and pepper.
  3. In a separate container, place eggs.
  4. Combine panko and coconut in a third container.
  5. One at a time, dredge shrimp in flour. Shake off excess.
  6. Dip shrimp in egg bath, and coat with panko/coconut mixture.
  7. Place on a sheet pan lined with tin foil.
  8. Bake for 15-20 or until browned. Turn halfway through cooking.
