Served whole, sliced into chicken fingers, or on a sandwich, this fried chicken can work in several preparations.
To make your own self-rising flour, combine 2 cups of all-purpose flour, 1 tsp salt, and 3 tsp baking powder. You’ll be slightly over the suggested recipe amount, but it’s not an issue.
Ingredients:
- 2 eggs
- 2 cups self-rising flour
- 3 chicken breast pieces, cut in half to create 6 thin portions
- Vegetable oil
- Salt
- Pepper
- Garlic powder
- Paprika
Preparation:
- Beat eggs in a large bowl.
- In a separate bowl of equal size, place self-rising flour.
- In a large pan over medium heat, allow oil to reach 300 degrees. Use enough oil to cover 3/4 of chicken.
- Season chicken liberally with salt, pepper, garlic powder, and paprika.
- Coat chicken in egg, and then dredge in flour. Cook in batches, making sure to not over crowd pan – 5 minutes per side, or until browned.
- Cool chicken on wire racks over paper towels to drain excess oil.
*Check temperature of oil occasionally and adjust as needed to maintain 300 degrees.
