Braised Brisket Cheddar Melts


A classic braised brisket, used in a sandwich the whole family can appreciate.

Ingredients:

Braised Brisket

  • 3 Tbsp vegetable oil
  • 1 (2-lb) cut beef brisket
  • Salt
  • Pepper
  • Garlic powder
  • 1 large onion, chopped
  • 4 carrots, cut into 1 inch pieces
  • 3 celery ribs, cut into 2 inch pieces
  • 6 garlic cloves, smashed
  • 1/4 cup apple cider vinegar
  • 1 cup chicken stock
  • 1 (28-oz) can diced tomatoes

Sandwich

  • Focaccia bread
  • Sharp cheddar, shredded
  • Ranch

Preparations:

Braised Brisket

  1. Preheat oven to 350 degrees and position rack to the lower third position.
  2. Season brisket generously with salt, pepper, and garlic powder.
  3. Heat a large, oven proof pot over medium-high heat. Add oil and swirl to coat. Add brisket to pot and brown on all sides. Remove meat and keep warm on a clean plate.
  4. Reduce heat to medium. Add onion, carrots, celery, and garlic. Cook until golden brown – 12-15 minutes.
  5. Add vinegar and deglaze, scraping brown bits from bottom of pot.
  6. Add stock and tomatoes and bring to a simmer.
  7. Return brisket to pot. Cover and place in oven. Bake 3-1/2 hours, removing lid for the last hour and basting with liquid.
  8. Remove pot from oven. Set brisket aside and allow to cool. Strain braising liquid and reserve.
  9. Shred brisket. Pour reserved liquid over meat and stir.

Sandwich

  1. Slice focaccia bread to desired size and halve to create top and bottom sandwich pieces. Layer with shredded brisket and cheddar.
  2. Cook over medium heat on a nonstick skillet coated in cooking spray – browning both sides and melting cheese.
  3. Remove from heat. Pull sandwich apart, drizzle with ranch, and reassemble. Cool slightly and enjoy.
