Creamy Crustless Quiche Lorraine


It’s a classic that includes bacon, onion, and Swiss cheese. Ours has a creamy, custard like texture though and we ditched the crust. Give it a try!

Cook onions until softened and golden brown with 1 Tbsp butter. Remove from heat and cool slightly.

Grease a 10-inch cast iron skillet with butter and sprinkle breadcrumbs over the bottom.

Assemble the remaining ingredients.

Add onions and bacon to the cast iron skillet, disrupting evenly.

Sprinkle cheese over bacon and onions.

Combine eggs, cream, milk, and 1/2 tsp pepper in a large bowl. Whisk to mix throughly.

Pour egg mixture over cheese.

Bake for 25 minutes at 425 degrees until browned and the center is set.

Cool for 15 minutes or to room temperature before serving.

Ingredients:

  • 1 Tbsp unsalted butter, plus more for greasing skillet
  • 1 cup yellow onion, small diced
  • Pinch of salt
  • 2 Tbsp panko breadcrumbs
  • 8 slices bacon, cooked and crumbled
  • 8 ounces Swiss cheese, shredded
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 tsp freshly ground black pepper

Preparation:

  1. Preheat oven to 425 degrees.
  2. Sauté onions with 1 Tbsp butter in a skillet until softened and golden brown. Season with salt. Remove from heat to cool slightly.
  3. Grease a 10-inch cast iron skillet with butter and sprinkle breadcrumbs across bottom of pan.
  4. Spread sautéed onions and cooked bacon evenly in cast iron skillet.
  5. Sprinkle cheese over onions and bacon.
  6. Whisk eggs, cream, milk, and pepper together until fully combined. Pour over cheese. Do NOT stir ingredients.
  7. Bake for 25 minutes or until browned and center is set.
  8. Cool for 15 minutes or until room temperature (your preference) before serving.
