Quinoa Fruit Salad


A fruit salad with protein packed grain and naturally sweetened dressing! It’s a good thing.

Pile all the fruit in a large bowl. Mix lime juice, honey, and chopped mint together until well combined.

Add the cooked quinoa to the fruit and pour dressing over. Gently toss to evenly coat.

Garnish with extra mint if desired.

Ingredients:

  • 1 cup cooked quinoa
  • 2 Tbsp lime juice
  • 3 Tbsp honey
  • 2 Tbsp chopped mint
  • 1-1/2 cups blueberries
  • 1-1/2 cups strawberries, chopped
  • 1-1/2 cups pineapple, chopped
  • Mint leaves, for garnish (optional)

Preparation:
